2 Ingredient Veggie Pasta!

The last couple weeks have been difficult. I’m still on the mend after feeling super ill. I had to get tested for COVID-19 and thankfully it came back negative. It’s just a regular flu that needs to run its course.

I’ve been focusing on getting lots of vegetables into my diet. I need those extra nutrients more than ever right now! Packing a variety of fresh and frozen vegetables and fruits will help my body fight illness and provide me with extra energy.

I decided to create a healthy veggie sauce using frozen vegetables to add to my meals. I used this sauce on my pasta and it worked out fabulously. It’s a completely guilt free sauce using only two ingredients. I used a frozen mix of broccoli, cauliflower and carrots to make my veggie sauce. You can use whatever vegetables you have on hand to make this delicious veggie sauce. I’m sure the possibilities are endless and many combinations would be fantastic.

I used beetroot noodles for my pasta dish because that’s what I had on hand. They ended up being absolutely delicious. I actually found them at my local Dollar Store. They only cost my $1.50 and provided meals for two days. I ate large portions along with my partner and we still had lots left over for lunch the next day. I love saving money! I will definitely buy those again if I see them at the store. You can use whatever type of pasta you have or prefer for this recipe. I suggest using something like a whole grain pasta for added nutrition.

This is also a great way of cleaning out your fridge and making sure all the veggies you bought get used up. I hate food waste so I try creating recipes like this one in order to use everything up. We tend to buy a lot and don’t plan out our meals very well. Creating recipes like this is great to use it all up and not waste hard earned money. Nobody wants to throw away spoiled food.

Many people are also cutting back on food spending and trying to create cheaper meals. Grocery store spending can be quite high for all of us no matter what our diet is these days. If you live in a place where you can’t grow anything yourself due to the climate then these costs can be even higher unfortunately. I’m in that boat myself because it’s too cold most if the year where I live sadly. I can only grow my veggies for a short time every summer.

I hope you all enjoy this recipe as much as I do! I need quick and easy recipes because life is just too busy! I also need to keep my diet as clean as possible so I can feel at my absolute optimal. This is why I create simple and healthy recipes like this one. 2 Ingredient Veggie Pasta

Ingredients

– 300-400g  of Pasta
– 5-6 cups of veggies (I used frozen broccoli, Cauliflower and carrots).


– Save 2 cups of the pasta water for the sauce. This will add great consistency and flavor.

Optional:
– Seasonings and spices of choice (optional)
– 1 tsp. nutritional yeast (optional)

Method

1. Boil a large pot of water for the pasta.

2. Add the veggies to a pan and cook them up. Just use water or veggie broth to cook them up. Don’t use oil because that will increase the calories significantly.

3. Add the cooked veggies to a blender. Add spices, seasonings and nutritional yeast if you are using them.

4. Add the pasta water to the blender. Start with 1 cup and decide how thick you want your sauce.

5. Drain and plate your pasta. Add the sauce. Combine well.

2 ingredient Potato & Veggie Patties

Who needs a recipe that can be made super fast but will still help you stick to your wellness goals? Fast food can definitely be made with a healthy twist if you put some thought behind it.

I love making Potato and Veggie patties because they taste super delicious and keep me on track with my health and wellness goals. I also love how I can use the same mixture to make a variety of things too. I make patties and veggie bites using the same simple mixture. I love easy recipes like this that can provide us with many different meal options. Let’s face it if we don’t have a variety of quick recipes then we will seek unhealthy alternatives.

Easy Potato & Veggie Patties with Hot Sauce
Super simple & delicious Potato & Veggie Patties

The number one excuse people make for not eating healthy is that they don’t have time to cook.

I just don’t agree with that because I can cook up a healthy meal using just a few ingredients on a normal basis. In the time it takes you to order food and get it picked up or delivered you can make a healthy meal at home. It doesn’t take much effort to cook up potatoes, rice, open a can of beans or legumes and whatever veggies you have on hand. Frozen or canned veggies are wonderful to have at home because they cook up really fast. I feel like these types of convience foods are extremely helpful in order to keep us on a track with our wellness goals.

I use my instant pot to cook up most of my meals because I’m short on time. You can make pretty much anything in this amazing small appliance quickly. I love to fill up my instant pot with healthy starches like potatoes or rice. Having it pre-made gives me the opportunity to make a meal super fast. I also love having precooked potatoes in the fridge so you just have to grab them and reheat them when you get hungry. Rice can also be frozen which I find very helpful when I know it’s going to be a super busy day.

Having time saving hacks will prevent you from going out and buying terrible junky foods. Being prepared will help you stay successful and on the right track.

POTATO & VEGGIE PATTIES

Ingredients:
– 4-5 lbs of potatoes
– 4-5 cups of veggies (I used frozen veggies, my favorite is brocolli and green beans)
– seasonings of choice (optional)

1. I cook my potatoes in my 6 quart Instant Pot (about 4-5 lbs of potatoes) for 20 minutes and allow it to naturally release. You can also cook potatoes in a regular pot on the stove if you don’t have an Instant Pot.

2. Cook up 5-6 cups of frozen mixed veggies on a frying pan using water or broth to saute them.

3. Add the potatoes into a large mixing bowl and mash them up. Depending on the size of the bowl, you may need to do this in batches.

4. Add in the cooked veggies and mix well.

5. Add in any optional seasonings or spices of choice.

6. Shape into patties and pop them into the air-fryer to cook up. You can also use the oven if you don’t have a air-fryer available to you.

I cook mine at 350 F for 14 minutes, flipping them half way. Adjust the timing according to the size of patty you make.

I dip mine in sugar free ketchup most of the time. I also like to make veggie burgers using this recipe too.

Veggie Garden Love

I’m enjoying my veggie garden and it’s abundance this year more than ever. With COVID-19 happening I still only shop when necessary. I love being able to grow my own veggies so I don’t have to buy as much produce at the grocery store. Being able to just walk outside and pick my own veggies is the best feeling ever!

I also love how fresh my home grown produce is. Honestly it even tastes better! Currently I’m obsessed about how my Green peppers taste. I feel so grateful to be able to grow these healthy foods. I feel so energetic and happy during this time of year. It’s probably because of a combination of things I’m sure. I eat even healthier, fresher and more organic food than other times of year for starters. I feel way more active as I’m busy gardening and taking a couple long walks daily. The amount of vitamin D I’m also getting daily makes a huge difference in my wellness.

Simple Healthy Habits that Anyone can implement.

I want to share with you some of my simple healthy habits. I often get asked what people should start doing on their wellness journey. This is sometimes a difficult question to answer because we can implement many small yet important steps.

These healthy habits are surprisingly super easy to implement and they sure do make a huge difference in our health. These habits are also super easy for people who are just stepping into the wellness zone. It can all seem so overwhelming but really it’s not that hard at all. Back when I started my health journey I started by eliminating flavoured coffee whitener and implementing more water into my diet. Two pretty simple things but yet I instantly lost 10 lbs by making these changes. Every small change makes a big impact on our overalls health and wellness.

Let’s get into my favourite easy healthy habits. These habits are simple and anyone can truly implement them in their lives.

Wellness is a big picture with many pieces to the puzzle. By implementing these small tasks one at a time it makes sticking to them long term very possible. I feel like adding too many new healthy habits to your routine all at once is just too overwhelming. Most people will get frustrated and stop everything all together with time. I always suggest that people pick one or two healthy habits that they want to work on. Implement changes slowly and they will just become a natural way of life. This will help you stick to this long term and truly benefit from it.

I add simple things to my diet but over all they make a huge impact on my health, energy levels and the way I look at wellness as a whole. All these pieces together make the future brighter.

One of my favorite things that I implement into my diet and lifestyle is Lemon Water. I love the energy lemon water gives me and I always have a water dispenser dedicated to it. This is such a basic health addition to my diet but yet it makes a huge impact. Lemons are known to purify the blood, improve our skin, they have Vitamin C, and they aid in digestion. The list can continue with all the amazing benefits of lemon water. I feel much more energetic when I consistently add this one simple healthy habit to my life.

Another one of my favorite additions to my wellness routine is adding Chia Seeds in my diet. If I had to pick one thing that I couldn’t live without, yep this would probably be it! These tiny amazing seeds are full of protein, iron, omega 3 fatty acids, antioxidants, fiber and calcium. I love making easy treats like chia pudding for the family. We love to make vanilla or chocolate chia pudding. It’s so easy and super healthy! I even add chia seeds to my water and drink them up when I don’t get a chance to incorporate them into my day.

I included simple things like Gratitude Journaling because this will definitely start your day off on positive note. It puts us in a state of joy and we can really feel appreciatation for all that we have. It keeps us focused on all the good things happening in our lives. It has been proven to increase self esteem as well. This is a great way to really reflect on all the things we have accomplished. Also by putting ourselves in a positive state we reduce stress. When you put yourself in a state of gratitude and positivity it completely shifts how you feel and the way you look at things. Negative feelings and thoughts seem to float away. I like to start my day off with writing in my Gratitude Journal because it starts my day off on a great note. It only takes a few minutes and it makes a tremendous difference in how I feel and sets the tone for the day ahead. My journal asks that we reflect on 3 things that we are grateful for and it also includes a positive quote as well. Find a journal that suits you and try implementing this simple habit.

Healthy Holiday Applesauce Muffins!

Hi everyone! I hope the holidays haven’t burnt you out yet and your still thriving. This time of year has many if us feeling depleted. It’s the shopping, events, decorating, cooking, entertaining and it gets so tiresome.

We also tend to over indulge in goodies and other foods this time of year. We all do it no matter how healthy we are. It’s also a very social time of year with all the gatherings. I think we should enjoy dessert and good food with loved ones. After all we don’t see them all the time.

I do find that in order for me to stay on track with my health goals however that I need that back up treat that’s legit healthy though. It’s gotta taste great but still be healthy. I know I’m asking for a lot here but it’s possible. I need that balance so keeping the healthy treat around the house makes me feel better. I’ll reserve my super indulgent holiday eating for when I’m out with family & friends.

The day I came across Dr. Neil Bernard’s recipe was probably one of the best days ever! It was an old recipe from a weightloss book that he wrote long ago. I only picked it up at a thrift shop because it was written by him and he is all about the oil free cooking too. I practically did the happy dance when I came across it. Yes I still modified the original recipe but the bones of the recipe remained the same. For that I’m thankful to him!

It’s such a simple recipe and it uses only a handful of ingredients. Again I can say “thank you Dr. Bernard!” Simple recipes using few ingredients are my way of life! I’m a mom of five and I don’t have extra time! I work 12 hour shifts in a hospital so again this girl has no extra time to spare! Anything that makes my life easier I’m down for.

I’ve tried this Applesauce recipe with and without raisins and it works out great both ways. My 10 year old is obsessed with these muffins and likes the raisins in them. I tend to make them without raisins for myself because I try and limit my dry fruit consumption.

Creamy Pumpkin Mac & Cheese Sauce

I’m currently obsessed with all things pumpkin these days. Those Fall vibes are going strong at my house! Wreaths, soy scented candles, pumpkin decor pieces and pillows! We have it all covered over here! My kids have always been used to decorating throughout the year for various occasions or putting out seasonal decorations. If I’m late getting the house decorated then they usually just take matters into their own hands and get it done themselves. Off to the basement they go into the endless bins of seasonal decor we keep put away. We reuse our decor year after year and only add a couple new pieces every year. This time of year is cozy and comforting and we all look forward to the Fall season at our house.

I’ve been craving comfort food like pasta & hearty soups these days as the weather gets crisp. I’ve been getting my usual delivery of Organic Pumpkin Pureè from Amazon. I have loads of pumpkin to create new recipes with now. Simple things like this make me a happy mommy.

I’ve been adding the pumpkin to my baked goods, breakfast foods, smoothies and fall themed lattes. This is totally my favourite foodie time of year! So many opportunities to create tummy tasty foods using pumpkin!

This is my simple creamy Pumpkin Sauce recipe below. You can whip it up in 5 minutes! Store it in a Mason Jar to use later or add it straight to your pasta. You can make it ahead and keep it in your refrigerator which is handy if your in a hurry to make dinner on a weekday. Just heat it up in a deep frying pan or pot and just add your hot pasta right into it. Combine well and add any veggies you have on hand to it. Honestly I feel like these simple recipes are the best meals! Food doesn’t have to be complicated!

My Creamy Pumpkin Mac & Cheese Sauce:

– 1 cup raw cashews
– 1/2 cup warm water
– 1/2 cup dairy free milk of choice. I like Flax or Oat milk.
– 1/4 tsp turmeric
– 1 tsp paprika
– freshly ground pepper to taste
– 2 – 3 cloves of garlic
– 1/4 cup nutritional yeast
– 1 tbsp miso paste

You can add any other spices of yoour choice as well. I simetimes add a bit of Mrs Dash and it tastes great with that additional seasoning.

Add a splash of extra milk if you think it needs it. I prefer my sauce on the thicker side.

That’s it! Simple & delicious.

Quick Meals!

I’m often making quick meals on the go. I feel like most people can relate. We’re all short on time and in a rush to make fast and easy meals. The hard part is creating meals that are healthy so we aren’t tempted to eat anything we can get our hands on. Worst still is grabbing takeout and fast food when we’re in a rush.

I find by sticking to some staple meals I’m able to quickly whip them together in no time at all. By always keeping staple items on hand at home it will make your life so much easier. I also make bigger batches of rice, baked oats and porridge so I have left overs for the next day. I love taking left over porridge to work for breakfast and then I add some berries to it and hemp hearts. That will keep me feeling full long and I wont have to spend money buying an unhealthy breakfast option on the go.

I always make extra sweet potato, white or yellow potatoes in my pressure cooker too. I just use the extra for lunch the next day for my hubby and I. I just add some seasoning to it and eat it with a hearty salad. It’s a simple, fast and nutritious meal!

I love making things like chia pudding in a Mason jar too. I make a few days worth of chia pudding and then we have the perfect breakfast for work or a great go to snack. I don’t have to worry about what to make because that meal is covered. Simple tips like this help keep us on track and because it’s so nutritious it will give us ample energy for our busy lives!

Chickpea & Herb Summer Salad

I’m hanging on to Summer until the very end! It’s too short! I also love how we tend to crave simpler food dishes during the summer. I’m loving cold chickpea and herb salads these during these summer days. Simple and healthy! I’ll be sharing one of my latest simple summer salads in today’s post. A few people messaged me asking for the recipe so I’ll just post it here for everyone. It’s so super easy and takes very little time to make.

Chickpea & Herb Summer Salad

Ingredients:

  • 1 can of Chickpeas

  • 1 cup of parsley, chopped

  • 1/2 cup cherry tomatoes cut in half

  • 1 tbsp hemp hearts

  • 1/2 cup Apple Cider Vinegar

  • Drizzle of Olive oil

  • Salt & Pepper

  • 1 tbsp of minced garlic or you can use garlic powder as an alternative

  • 1 bell pepper, chopped

  • 2 cups of Fresh Spinach

  • Method:

    1. Drain and rinse your chickpeas

      Add them into a large bowl

      Chop up your parsley, garlic, tomatoes and bell pepper

      Toss the chopped ingredients into the bowl except the parsley

      Toss in the Apple Cider Vinegar and drizzle in some olive oil as well.

      Mix the ingredients well

      Add in the parsley and fresh spinach to the salad

      Season your salad with Salt and Pepper

      Give the salad another toss

      Sprinkle the hemp heats onto the salad and serve!

    Enjoy!

    * This Salad can be made ahead and stored in the fridge. The longer it sits in the fridge the better it tastes. I suggest you only add the spinach in before serving however. It will get too wilted otherwise. I add my spinach in the morning before leaving for work if I’m taking it for lunch. Adjust the dressing measurements to your desire. If your oil free you can totally skip it in this recipe. I’ve eaten it oil free many times and it’s still great. *

    Trust The Energy

    Do you trust the energy you feel? Do you tune into how a person or place makes you feel?

    Have you ever met someone and instantly knew you were meant to be friends? Maybe you felt like you knew them or that something about them was familiar as well. Sometimes we meet people and just know we had a soul contract together and we were meant to cross paths.

    Have you ever met someone where their energy didn’t feel good? Perhaps they’re in a angry place in their lives and the energy they are projecting is far from positive unfortunately.

    Anyway you look at at either the vibes and energy will make you feel good or they will affect you negatively.

    I had another interesting situation arise this week. I was on the subway platform waiting for the train after work. The train stopped and I was about to get into the subway cart. That’s when I got this sick feeling. I also felt like I was unable to breathe properly. It felt like a weight was in my chest all of a sudden. I knew at that moment I couldn’t get into that train. People were annoyed with me for holding them up so I quickly stepped aside and started walking down the track. Once I passed that subway cart I felt better. I entered the next cart over and immediately felt much better.

    If this was years ago I would have thought I was going crazy. I’ve learned over the years that I’m an empath and I’ve imbraced it.

    I’m glad that I don’t question things anymore. I now trust myself and know I’m feeling something for a good reason. Why I feel this way will unveil itself so I understand. It did on that subway ride too. Many stops later along my route home on the train I saw someone exit the cart next to mine who I knew well. She is the reason I couldn’t get in that cart. She is a part of my past that I never want to bring forth into the present. Had I walked into that subway cart I would have had an extremely negative situation and it would have been draining.

    Either it was my spirit guide not allowing me on that subway cart to protect me or just the rush of energy I received that stopped me. Either way I’m thankful.

    Trust how you feel. Trust the energy you feel in all situations. We can all feel it. Some people are more aware and effected by it like myself. Some people say go with your gut feelings. Yes! Absolutely! That’s your soul guiding you in this lifetime.

    Don’t allow energy vampires to stay in your circle. They will deplete you and no relationship is worth that. Stick with those that make you feel good, energizing and happy. The more of those types of people you surround yourself with the higher your vibration will be. You will continue to draw more of those amazing positive vibed individuals into your life as well. It’s actually pretty magical! Truly live in a good vibes only zone and life will become more than you every dreamed was possible.

    I hope you all have a wonderful weekend! Stay true to yourself and remember to do something everyday that makes your soul sing. That can be a walk in nature or a coffee alone while reading a great book. We all need a little recharge! Love yourself because you truly are amazing!
